When you think of health foods, you may not think of pickles or sauerkraut right away. But the truth is there are a lot of health benefits that come from the live microbes that thrive in foods such as yogurt, kimchi, and sauerkraut.
A growing amount of research shows that a diet that includes a regular intake of fermented foods can actually bring benefits. Fermented foods are preserved using an age-old process that boosts the food’s shelf life as well as its nutritional value.
Our digestive tract is made up of 100 trillion or so bacteria and microorganisms, and fermented foods give the body beneficial probiotics. Fermented food provides vitamins that we seek in fresh foods, which aren’t always available. Fermentation also helps with digestion, supports a healthy immune system, and reduces inflammation.
To ensure that fermented foods contain probiotics, look for the words “naturally fermented” on the label. It’s also important to look for bubbles in the liquid when opening the jar because it’s a signal that live organisms are inside the jar.
Of the many fermented foods available, one deserves a spotlight: kimchi. In recent years, the traditional Korean pickled side dish has become increasingly popular all over the world, including the United States. Kimchi is one of Korea’s staples and is a fermented cabbage dish, flavored with red pepper, salt, and sometimes, other vegetables.
